Lightened Up Cinnamon Buns

These lightened up cinnamon buns are a perfect Christmas time or anytime treat!

How to Make This:

Ingredients:

  • 1 cup Fat free skim milk

  • 1Tbsp Vegetable oil

  • 1Tbsp Sugar

  • 1 tsp salt

  • 1Tbsp Yeast (about 1 package)

  • 2 1⁄2cups All-purpose flour, divided

  • 1⁄4 cup unpacked brown sugar

  • 1⁄4 cup Dark corn syrup

  • 2tsp Ground cinnamon

  • 1⁄8 tsp Ground nutmeg

  • 1 tsp Orange zest

  • 1⁄4 cup dried cranberries

Instructions:

  1. Stir together milk, vegetable oil, sugar and salt in a small saucepan.

  2. Heat to 110 degrees.

  3. Pour yeast over 2 tablespoons 110 degree water and let sit 5 minutes.

  4. Stir into milk mixture.

  5. Mix warm milk with flour, starting with half the flour.

  6. Mix in enough remaining flour to make a soft dough. I ended up using 2 1/4 cups.

  7. Save remaining flour to roll out dough.

  8. Let dough rest 10 minutes and then knead well for about 5 minutes by hand or with a dough hook.

  9. Let rest 10 minutes.

  10. Spray a large bowl with cooking spray, add dough, cover with plastic wrap and let rise in a warm place until doubled, about 1 hour.

  11. Lightly spray a 9-inch round baking pan with cooking spray.

  12. Turn the dough onto a floured surface and roll into a 12 x 10-inch rectangle.

  13. Spray with cooking spray.

  14. Stir together brown sugar, corn syrup, cinnamon, nutmeg and orange zest, evenly spread over dough.

  15. Sprinkle with cranberries.

  16. Roll up tightly, like a jelly roll.

  17. Cut into 12 pieces.

  18. Place buns in baking pan.

  19. Cover with plastic and let rise until doubled, about 1 hour.

  20. Bake buns at 350 until browned on top, 25- 30 minutes.

  21. Cool before inverting onto a serving plate.

  22. Enjoy!
