Lightened Up Cinnamon Buns
These lightened up cinnamon buns are a perfect Christmas time or anytime treat!
How to Make This:
Ingredients:
1 cup Fat free skim milk
1Tbsp Vegetable oil
1Tbsp Sugar
1 tsp salt
1Tbsp Yeast (about 1 package)
2 1⁄2cups All-purpose flour, divided
1⁄4 cup unpacked brown sugar
1⁄4 cup Dark corn syrup
2tsp Ground cinnamon
1⁄8 tsp Ground nutmeg
1 tsp Orange zest
1⁄4 cup dried cranberries
Instructions:
Stir together milk, vegetable oil, sugar and salt in a small saucepan.
Heat to 110 degrees.
Pour yeast over 2 tablespoons 110 degree water and let sit 5 minutes.
Stir into milk mixture.
Mix warm milk with flour, starting with half the flour.
Mix in enough remaining flour to make a soft dough. I ended up using 2 1/4 cups.
Save remaining flour to roll out dough.
Let dough rest 10 minutes and then knead well for about 5 minutes by hand or with a dough hook.
Let rest 10 minutes.
Spray a large bowl with cooking spray, add dough, cover with plastic wrap and let rise in a warm place until doubled, about 1 hour.
Lightly spray a 9-inch round baking pan with cooking spray.
Turn the dough onto a floured surface and roll into a 12 x 10-inch rectangle.
Spray with cooking spray.
Stir together brown sugar, corn syrup, cinnamon, nutmeg and orange zest, evenly spread over dough.
Sprinkle with cranberries.
Roll up tightly, like a jelly roll.
Cut into 12 pieces.
Place buns in baking pan.
Cover with plastic and let rise until doubled, about 1 hour.
Bake buns at 350 until browned on top, 25- 30 minutes.
Cool before inverting onto a serving plate.
