A delicious sweet and tart combo that is perfect for the Holidays!

How to Make This:

Ingredients:

  • 12 oz, fresh or frozen Fresh cranberries

  • 2⁄3 cup Lakanto Classic Monkfruit Sweetener With Erythritol (or calorie free sweetener of choice)

  • 20 oz Canned crushed pineapple in juice, drained

  • 1 cup Mini marshmallows

  • 8 oz Fat free whipped topping

  • 1⁄2 cup pecans, chopped

Instructions:

  1. In a food processor, combine fresh cranberries and sweetener. Pulse until the cranberries are finely chopped and the sweetener is well combined.

  2. Add cranberry mixture to a bowl and refrigerate for at least 4 hours or overnight. This allows the cranberries to macerate and sweeten.

  3. Add remaining ingredients, reserving some pecans to garnish with, and fold in until combined.

  4. Refrigerate for at least 4 hours or overnight, before serving. This allows the flavors to marry, and the dessert to set up.

  5. Garnish with remaining pecans and additional cranberries.

  6. Enjoy!
