Cranberry Fluff
A delicious sweet and tart combo that is perfect for the Holidays!
How to Make This:
Ingredients:
12 oz, fresh or frozen Fresh cranberries
2⁄3 cup Lakanto Classic Monkfruit Sweetener With Erythritol (or calorie free sweetener of choice)
20 oz Canned crushed pineapple in juice, drained
1 cup Mini marshmallows
8 oz Fat free whipped topping
1⁄2 cup pecans, chopped
Instructions:
In a food processor, combine fresh cranberries and sweetener. Pulse until the cranberries are finely chopped and the sweetener is well combined.
Add cranberry mixture to a bowl and refrigerate for at least 4 hours or overnight. This allows the cranberries to macerate and sweeten.
Add remaining ingredients, reserving some pecans to garnish with, and fold in until combined.
Refrigerate for at least 4 hours or overnight, before serving. This allows the flavors to marry, and the dessert to set up.
Garnish with remaining pecans and additional cranberries.
