Cottage Cheese Protein Brownies🍫
I tried out a new recipe for the Viral TikTok cottage cheese brownies. They are full of protein, lower carb, and gluten free, but full of chocolatey brownie flavor! If you are looking for a delicious chocolate treat without all of the calories and points of a traditional brownie, these are the ones for you!
How to Make This:
Ingredients:
1 cup cottage cheese
2 scoops protein powder (I used Isopure Protein Powder, Creamy Vanilla)
4 large eggs room temperature
2/3 cup unsweetened cocoa powder
1/4 cup coconut oil melted
1/2 cup coconut flour
3/4 cup now calorie sweetener ( I used Lakanto Classic Monk Fruit Sweetener With Allulose)
1 tsp vanilla extract
1 tsp baking powder 70 g or 5 servings
Lily's Milk Chocolate Style No Sugar Added, Baking Chips
1 tsp coffee powder
1/4 tsp salt
Instructions:
Add the cottage cheese to a blender or food processor and process until smooth.
To the cottage cheese, add the 4 eggs, melted coconut oil, and vanilla extract.
Blend or process until well combined.
Scrape down the sides as needed to make sure everything gets blended and smooth.
Add the protein powder, unsweetened cocoa powder, coconut flour, sweetener, coffee powder, salt and baking powder to the blender or food processor with the wet ingredients.
Blend until a smooth batter forms, scraping down the sides as needed.
Line a 8X8 baking pan with parchment paper or spray with cooking spray.
Pour the batter into the prepared baking pan, spreading it out evenly.
Sprinkle the chocolate chips evenly over the top of the.
Bake in the preheated oven at 350F for 20-22 minutes, or until the top is set and is firm to the touch and a toothpick inserted into the center comes out with a few moist crumbs, but not wet batter. Baking times will vary depending on oven, altitude, etc.
Allow the brownies to cool a few minutes in the pan before removing and cutting.
