Chocolate Strawberry Breakfast Cookies/ Energy Bar Cookies🍫🍓

These healthy, homemade breakfast cookies/energy bar cookies make for a great alternative to store bought energy bars. They also make for a quick and easy breakfast on the go!

How to Make This:

Ingredients:

  • 2 cups Uncooked old fashioned rolled oats

  • 1/4 cup Ground flaxseed meal

  • 2 Tbsp Dried chia seeds

  • 1 tsp Ground cinnamon

  • 2 scoops Isopure Zero Carb Creamy vanilla protein powder

  • 1/2 tsp salt

  • 1 Tbsp Coconut oil

  • 2 medium Banana

  • 2 large Egg

  • 1/4 cup Lakanto Maple flavored syrup

  • 1/4 cup Unsweetened applesauce

  • 1/2 cup Strawberries, diced

  • 112 gm (about 1/2 cup) Lily's Milk Chocolate Style Baking Chips

Instructions:

  1. In a medium bowl combine oats, ground flax, chia seeds, protein powder, cinnamon and salt.

  2. In a large bowl, add bananas and mash well.

  3. Add in applesauce, eggs, maple syrup and melted coconut oil and mix until fully combined.

  4. Stir dry mixture into the banana mixture until combined.

  5. Fold in diced strawberries and chips.

  6. On a cookie sheet, lined with parchment paper, drop about 1/4 cup sized scoops of the mixture onto a cookie sheet and flatten (you can use your fingers or a glass sprayed with cooking spray to flatten cookies).

  7. Bake at 350 F for about 15-20 minutes until edges are lightly browned.

  8. Let cookies cool on baking sheet.

  9. Enjoy!
