🌟PROTEIN PACKED!!🌟SKINNY Hashbrown Sausage Egg and Cheese Casserole🥚🧀🫑

This easy breakfast casserole is protein packed making it a great way to start your day. It is perfect for meal prep or for when you are cooking for a crowd!

How to Make This:

Ingredients:

  • 20 oz shredded frozen hashbrowns- defrosted

  • 1 lb ground turkey sausage

  • 12 large Eggs

  • 1 cup shredded cheese Reduced fat (4 oz)

  • ½ cup almond milk

  • ½ cup cottage cheese 2% milkfat

  • 1 tsp Dry mustard or dijon

  • 1/4 teaspoon black pepper

  • 1 tsp Kosher salt

  • 1⁄2 tsp Granulated garlic

  • ¼ tsp Red pepper flakes

  • 1 medium red bell pepper- chopped

  • 1 medium onion- chopped

  • 1/2 cup chopped green onions-divided

  • Cooking spray

Instructions:

  1. Preheat oven to 350 F°

  2. In a large skillet on med/high heat, add sausage, onions and bell pepper and cook until sausage is fully cooked and onions and peppers are softened.

  3. In a large bowl, add in eggs, almond milk, dry mustard, salt, pepper, granulated garlic, and red pepper flakes. Whisk until combined. Add in cottage cheese, and ½ of the green onions and fold in.

  4. Spray a 9×13-inch baking dish with cooking spray.

  5. Spread hash browns evenly in the baking dish.

  6. Layer the cooked sausage on top.

  7. Sprinkle ½ cup of the cheese on top of sausage.

  8. Pour the egg mixture over the sausage and hash browns.

  9. Bake uncovered, at 350F, for about 45-50 minutes or until eggs are set. Sprinkle evenly with remaining 1/2 cup cheese and remaining green onions. Return to the oven for about 5-7 minutes or until the cheese is melted.

  10. Enjoy!
