🌟PROTEIN PACKED!!🌟SKINNY Hashbrown Sausage Egg and Cheese Casserole🥚🧀🫑
This easy breakfast casserole is protein packed making it a great way to start your day. It is perfect for meal prep or for when you are cooking for a crowd!
How to Make This:
Ingredients:
20 oz shredded frozen hashbrowns- defrosted
1 lb ground turkey sausage
12 large Eggs
1 cup shredded cheese Reduced fat (4 oz)
½ cup almond milk
½ cup cottage cheese 2% milkfat
1 tsp Dry mustard or dijon
1/4 teaspoon black pepper
1 tsp Kosher salt
1⁄2 tsp Granulated garlic
¼ tsp Red pepper flakes
1 medium red bell pepper- chopped
1 medium onion- chopped
1/2 cup chopped green onions-divided
Cooking spray
Instructions:
Preheat oven to 350 F°
In a large skillet on med/high heat, add sausage, onions and bell pepper and cook until sausage is fully cooked and onions and peppers are softened.
In a large bowl, add in eggs, almond milk, dry mustard, salt, pepper, granulated garlic, and red pepper flakes. Whisk until combined. Add in cottage cheese, and ½ of the green onions and fold in.
Spray a 9×13-inch baking dish with cooking spray.
Spread hash browns evenly in the baking dish.
Layer the cooked sausage on top.
Sprinkle ½ cup of the cheese on top of sausage.
Pour the egg mixture over the sausage and hash browns.
Bake uncovered, at 350F, for about 45-50 minutes or until eggs are set. Sprinkle evenly with remaining 1/2 cup cheese and remaining green onions. Return to the oven for about 5-7 minutes or until the cheese is melted.
