These tasty high protein biscuits are great on their own or used for a breakfast sandwich! Either way, they are a great way to start your day The base of the dough is one of my favorite things, the incredibly versatile 2 ingredient dough!

How to Make This:

Ingredients:

  • 1 ¾ cups plain fat free Greek yogurt

  • 4 eggs

  • 2 ½ cups self rising flour

  • ¼ cup ground flaxseed

  • 1 teaspoon garlic powder

  • 1 tsp onion powder

  • ½ tsp salt

  • 1/4 teaspoon red pepper flakes

  • ½ cup green onions, finely diced

  • 3/4 cup (3oz) reduced fat sharp cheddar cheese, shredded- (I used Lucerne)

  • 8 oz cooked ham, diced

Instructions:

  1. Preheat oven to 350 F°

  2. In a large bowl, add and whisk together yogurt and eggs.

  3. In a medium bowl, add flour, flaxseed, garlic powder, onion powder, red pepper flakes and salt and mix well.

  4. Pour dry ingredients into wet ingredients and stir until most of the dry ingredients are no longer showing.

  5. Fold in green onions, cheese and ham until fully combined.

  6. Pour dough out onto a piece of parchment and press out to a rectangular shape of about 1/2 inch thick. Dough will be sticky, add a sprinkle of flour when needed if the dough is too sticky to work with.

  7. Using a knife or bench scraper, divide the dough into 12 equal pieces and scrape dough off parchment and place about an inch apart on a baking sheet (half sheet) lined with parchment.

  8. Bake biscuits for about 22-28 minutes, or until tops are slightly golden brown and biscuits are set. Baking times will vary depending on oven, bakeware, elevation,etc.

  9. Allow to cool slightly before serving. Enjoy as is or slice in half and use for breakfast sandwiches.

  10. Enjoy!
