HIGH-PROTEIN English Muffin Breakfast Pizza🥚🧀🍕

If you love biscuits and gravy but need a healthy, low-point breakfast option that actually keeps you full, you have to try these! Each one of these easy breakfast pizzas packs 19 grams of protein, and tastes like an absolute cheat meal!

How to Make This:

Ingredients:

  • 6 whole English muffins (I used Thomas' Light Multi-Grain English Muffins )

  • 1 12 oz jar (355 ml) gravy (I used Heinz HomeStyle Country Style Sausage Gravy)

  • 8 oz (225 g) ground turkey sausage (I used Butterball All Natural Turkey breakfast Sausage)

  • 12 large eggs

  • 3/4 cup (84 g) shredded reduced-fat cheddar cheese

  • ½ tsp salt

  • ¼ tsp pepper

  • 1 tsp Olive oil spray


Instructions:

  1. Preheat your oven to 375°F (190°C)

  2. Arrange your 12 English muffin halves cut-side up on a parchment lined baking sheet. Spritz with oil.

  3. Put your English muffins in the preheated oven and Bake at 375°F for 5 minutes.

  4. In a large skillet on medium-high heat add in turkey sausage and cook until browned, about 5-7 minutes.

  5. While your sausage is cooking, add your eggs to a large bowl. Add salt and black pepper and whisk well.

  6. Once sausage is done, transfer it to a bowl. In the same skillet, turn the heat down to medium-low and pour in the eggs. Cook until almost done, while they still look a little bit wet and shiny. They are going to cook more in the oven, so undercooking them slightly now they wont be overcooked later.

  7. Once the eggs are done, transfer them to a bowl. In the same skillet, pour in the jar of gravy. Add in about half of the cooked sausage. Stir and let cook on low heat for a couple of minutes until it is combined and bubbling.

  8. To assemble, spread a heaping 2 Tbsp of the gravy onto each toasted muffin.

  9. Top with about 1/4 cup of your scrambled eggs.

  10. Sprinkle 2 tablespoons of cheese over the eggs.

  11. Add remaining sausage evenly on top of the cheese, about 1 Tbsp per muffin.

  12. Place them back into the 375°F oven and bake for 8 to 10 minutes until the cheese is completely melted.

  13. Enjoy!
