High Protein✨ Breakfast Bowls🥚🧀🫑

These easy, high-protein, Denver style breakfast bowls are a great way to meal prep a healthy breakfast!

How to Make This:

Ingredients:

  • 1 1⁄2 pounds Petite red potatoes- cut into pieces

  • 12 large Eggs

  • 8 oz Farmland Ham, Fully Cooked, Cubed

  • 1 medium Red bell pepper, chopped

  • 1 medium Green bell pepper, chopped

  • ½ medium Onion, chopped

  • 6 Tbsp Reduced Fat Mexican Style 4 Cheese Blend

  • 2 Tbsp Chives, or green onions

  • 1 Tbsp Olive oil

  • 1 tsp Granulated garlic

  • 1 tsp Onion powder

  • 1/2 tsp Table salt, -1/4 tsp for potatoes- 1/4 tsp for eggs

  • Black pepper 1/2 tsp, - 1/4 tsp for potatoes -1/4 tsp for eggs

Instructions:

  1. Wash and cut potatoes into bite sized pieces.

  2. Add to a large bowl and add olive oil, granulated garlic, onion powder and ¼ tsp salt and pepper.

  3. Stir until potatoes are well coated.

  4. Add to a large sheet pan lined with parchment paper.

  5. Bake at 400F for about 30 minutes or until fork tender.

  6. While potatoes are cooking; in a large nonstick skillet on medium high heat, add the onion, bell peppers and ham and cook until veggies are softened and ham is heated through.

  7. Meanwhile, crack eggs into a large bowl and salt and pepper. Whisk until smooth.

  8. When the ham and veggies are ready, pour in the eggs and cook and stir until the eggs are cooked to your preference.

  9. Divide the cooked potatoes evenly between six containers, placing them on the bottom.

  10. Divide the eggs evenly and add to the top of the potatoes.

  11. Sprinkle each with about 1 Tbsp cheese each and top with chives or green onions if you wish.

  12. Enjoy!
