EASY Skinny Pumpkin Pie Baked Oatmeal
I meal prepped a WW friendly breakfast with this Fall inspired delicious and easy Skinny Pumpkin Pie Baked Oatmeal!
How to Make This:
Ingredients:
2 cups Uncooked old fashioned rolled oats
2 tsp Pumpkin pie spice(Homemade Pumpkin Spice Recipe)
1 1⁄2 tsp Baking powder
1⁄2 tsp Table salt
1⁄3 cup Lakanto Maple flavored syrup or 0 calorie sweetener of choice
1 1⁄2 cup Plain unsweetened almond milk
1 cup Libby's 100% Pure pumpkin
2 large Eggs
1⁄2 cup Unsweetened applesauce
1 tsp Vanilla extract
Cooking spray
Instructions:
In a medium bowl, mix together the oats, pumpkin pie spice, baking powder and salt.
In a large bowl, add in the remaining ingredients and mix until well combined.
Pour dry ingredients into wet mixture and mix in.
Spray a 9X9 baking dish with cooking spray and pour in oatmeal.
Bake, uncovered, at 375 F for 50-60 minutes or until oatmeal is slightly browned on top and set in the middle.
Store leftovers in an airtight container in the fridge for 5-7 days. Microwave to reheat.
