Banana Pancakes
Sweet, no flour, zero point pancakes!
How to Make This:
Ingredients:
2 medium Bananas, ripe divided
3 large eggs Eggs, beaten
1⁄2 tsp Vanilla extract
1⁄4 tsp Baking powder
1⁄8 tsp Ground cinnamon
1 pinch Ground nutmeg
1 pinch
Table salt
Cooking spray
Instructions:
In a medium bowl, mash bananas; slice remaining banana and set aside for serving.
Into bowl with mashed bananas, add eggs, vanilla, baking powder, cinnamon, and nutmeg and whisk until blended.
Coat a large nonstick skillet with nonstick spray; set over medium heat.
Into skillet, spoon 2 tbsp batter per pancake.
Cook until edges are set and bottoms are golden, about 1 minute.
Flip pancakes with and cook on other side, about 1 minute.
Serve pancakes topped with reserved sliced bananas and strawberries of fruit of your choice.
I dust mine with more cinnamon.
