Banana Pancakes

Sweet, no flour, zero point pancakes!

How to Make This:

Ingredients:

  • 2 medium Bananas, ripe divided

  • 3 large eggs Eggs, beaten

  • 1⁄2 tsp Vanilla extract

  • 1⁄4 tsp Baking powder

  • 1⁄8 tsp Ground cinnamon

  • 1 pinch Ground nutmeg

  • 1 pinch

  • Table salt

  • Cooking spray

Instructions:

  1. In a medium bowl, mash bananas; slice remaining banana and set aside for serving.

  2. Into bowl with mashed bananas, add eggs, vanilla, baking powder, cinnamon, and nutmeg and whisk until blended.

  3. Coat a large nonstick skillet with nonstick spray; set over medium heat.

  4. Into skillet, spoon 2 tbsp batter per pancake.

  5. Cook until edges are set and bottoms are golden, about 1 minute.

  6. Flip pancakes with and cook on other side, about 1 minute.

  7. Serve pancakes topped with reserved sliced bananas and strawberries of fruit of your choice.

  8. I dust mine with more cinnamon.
