The BEST Skinny Cattle Drive Casserole!🤠

This Skinny Cattle Drive Casserole with the biscuits baked right on top, is the ultimate cozy comfort meal that the whole family will absolutely love—they won't even realize it’s lightened up! The savory taco beef, black beans, creamy melted cheese layer, and fluffy golden-brown biscuits make for a delicious combo! It’s incredibly filling, and the perfect easy dinner hack to keep your tracking on point.

Ingredients:

  • Casserole Filling:

  • 1 lb (454 g) lean ground beef

  • 1 15 oz (425 g) can pinto beans

  • 1 large onion, diced

  • ¼ cup (60 ml) water

  • 2 Tbsp taco seasoning

  • 1 15 ounce (425 g) can fire roasted diced tomatoes, undrained

  • 1 4 ounce (113 g) can chopped green chiles

  • ¼ cup (60 g) light mayo

  • ¾ cup (170 g) fat free plain Greek yogurt

  • 1 cup (112 g) reduced fat (2% milkfat) cheddar cheese, shredded

  • Biscuit Topping:

  • 2 cups (240 g) heart smart bisquick mix

  • ¾ (180 ml) cup almond milk

  • ½ cup (56 g) reduced fat (2% milkfat) cheddar cheese, shredded

  • 1 Tbsp dried parsley

  • 1 tsp granulated garlic

  • 1/2 tsp chili powder

Instructions:

  1. Preheat the oven to 375°F (190°C).

  2. Heat a large skillet over medium-high heat. Add 1 lb lean ground beef and 1 large diced onion. Cook until the meat is fully browned and the onions are soft.

  3. Turn the heat down to low. Add and stir in taco seasoning, ¼ cup water, 1 can fire-roasted diced tomatoes (with their juices), chopped green chilies, and 1 can of pinto beans (rinsed and drained). Let the mixture simmer for 3–5 minutes until the liquid reduces slightly.

  4. While meat mixture is simmering, in a medium bowl, stir together Greek yogurt, light mayo, and 1 cup shredded cheddar cheese.

  5. Spray a 9 x 13 inch baking dish with cooking spray. Pour the beef mixture into the bottom of your prepared 9x13 glass baking dish and spread it into an even layer.

  6. Spread the cheese mixture smoothly and evenly directly over the warm beef and bean filling.

  7. In a separate bowl, combine Heart Smart Bisquick, dried parsley, granulated garlic and chili powder.

  8. Stir in almond milk and ½ cup reduced-fat shredded cheddar cheese until a soft dough forms. Do not overmix.

  9. Drop the biscuit dough by spoonfuls evenly across the top of the yogurt layer. Gently press it out with a spatula.

  10. Bake uncovered in preheated oven at 375°F for 25–30 minutes or until the biscuit top is fluffy, completely cooked through, and golden-brown, and the meat layer is bubbling around the edges.

  11. Enjoy!
