Lightened Up Cheeseburger Soup

This warm and cozy soup is a perfect comfort food for the cold winter weather! I lightened it up to make it WW friendly and lower calorie!

How to Make This:

Ingredients:

  • 16 oz Shady Brook Farms 93% lean ground turkey

  • 3/4 cup carrots, chopped

  • 3⁄4 cup celery, chopped

  • 3⁄4 cup onion medium bell pepper, chopped

  • 1 tsp Dried parsley 1 tsp Dried basil

  • 1⁄4 tsp Black pepper

  • 2 tsp Minced garlic

  • 5 tbsp light butter spread, divided (I used Brummel & Brown Spread Made with Yogurt)

  • 3 cups Fat free chicken broth

  • 4 cups Uncooked potatoes, diced

  • 1⁄4 cup All-purpose flour(start with 3 Tbsp and add additional Tbsp if needed)

  • 12 oz Velveeta 2 % Milk Pasteurized Cheese Product

  • 1 1⁄2 cups Plain unsweetened almond milk

  • 1⁄4 cup Plain fat free Greek yogurt (or fat free sour cream)

Instructions:

  1. In a large pot, brown turkey over medium-high heat.

  2. Once done, set aside. In the same pot over medium heat, saute onion, carrots, celery, pepper, basil and parsley in 1 tablespoon lightened butter spread until vegetables are soft, about 10 minutes.

  3. Add in garlic, and cook until just fragrant, about 1 minute.

  4. Add broth, potatoes and turkey; bring to a boil.

  5. Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender.

  6. About halfway through the simmer time for the soup, get a small skillet, melt remaining butter spread.

  7. Add flour; cook and stir for 3-5 minutes.

  8. Add to soup. Increase heat and bring to a boil.

  9. Cook and stir for 2 minutes.

  10. Reduce heat to low.

  11. Add cheese and milk; cook and stir until cheese melts.

  12. Turn off heat and stir in Greek yogurt or Fat free sour cream.

  13. Enjoy!
