Skinny 🫐Blueberry Pretzel Pecan Fluff
This lightened up blueberry fluff/salad is light, creamy and a perfect spring or summer dessert!
How to Make This:
Ingredients:
2 oz Rold Gold Pretzels, Sticks
4 Tbsp Brummel & Brown Spread Made with Yogurt
1/4 cup Lakanto Monkfruit sweetener with erythritol, golden
1/4 cup Chopped pecans
3/4 cup Lakanto Classic Monkfruit Sweetener With Erythritol- Divided
8 oz Low fat cream cheese
8 oz Fat free whipped topping
6 oz Blueberries
1 1/2 cup Unsweetened frozen blueberries
1 Tbsp Fresh lemon juice
1/3 cup Water
1 tsp Cornstarch
Instructions:
Preheat oven to 400°. Smash pretzels and add pretzels, pecans, melted butter spread and 1/4 cup Lakanto brown in a small bowl. Mix together.
Pour onto baking sheet and bake for 5-7 minutes. Cool completely.
In a medium saucepan, combine the frozen blueberries, 1/4 cup sweetener, water, lemon juice, and cornstarch.
Stir and bring to a boil over medium heat.
Lower heat to low and let simmer for 10-15 minutes until it thickens.
Remove from heat and let cool.
In a medium bowl, mix cream cheese and 1/2 cup Lakanto classic until creamy.
Fold in whipped topping.
Cover with plastic wrap and refrigerate for 2-3 hours.
To serve, fold in cooled, cooked blueberries and fresh blueberries.
Break pretzel mixture up. Reserve some to garnish with and either fold in the remaining or add remaining to individual servings.
