Peanut Butter Chocolate Banana Muffins

These muffins use pancake mix as a base to produce a delicious, easy breakfast perfect for a healthy meal prep.

How to Make This:

Ingredients:

  • 2 1⁄2 cups dry mix protein pancake mix (I used Krusteaz Buttermilk)

  • 4 Tbsp PBfit Pure peanut powder

  • 4 large Eggs

  • 3 medium Bananas, about 1 1/2 cups mashed

  • 1 cup Member's Mark Nonfat plain Greek yogurt or fat free sour cream

  • 1/2 cup unsweetened applesauce

  • 2 tsp Vanilla extract

  • 1⁄3 cup Monkfruit sweetener with erythritol (or no calorie sweetener of choice)

  • 1⁄2 cup Plain unsweetened almond milk

  • 70 gm Lily's Semi-Sweet Style Baking Chips

Instructions:

  1. In a large bowl, mash up bananas well.

  2. Add in eggs, yogurt, applesauce, vanilla, sweetener, milk and mix well.

  3. In a medium bowl, mix pancake mix and PB fit poweder together.

  4. Pour dry ingredients into wet and mix until just combined.

  5. Fold in chocolate chips.

  6. Fill muffin cups to almost full, this will give you 20 muffins.

  7. Bake at 400F for about 15-18 minutes, or until slightly browned.

  8. Enjoy!
