Lightened Up Lemon Bar Recipe

These lemon bars are a lightened of version of the traditional lemon bars that I make and love. They are a combination of sweet and tart with a bright lemon flavor that makes them a perfect summer time treat!

How to Make This:

Ingredients:

  • Crust Ingredients:

  • 1/3 cup all purpose flour

  • 5 Tbsp brown sugar

  • 8 Tbsp light butter spread or margarine

  • Filling ingredients:

  • 4 lg eggs

  • 1 1/2 cups powdered sugar, plus 1-2 Tbsp to dust tops with

  • 3/4 cup lemon juice zest from one lemon

  • 1/2 tsp vanilla

Instructions:

  1. Mix all crust ingredients together, smooth into bottom of 8X8 pan and bake at 350 for 30-35 minutes.

  2. Mix all filling ingredients together and pour over baked crust.

  3. Lower oven temp to 300 and bake 30 minutes.

  4. Let cool completely and dust with 1-2 Tbsp powdered sugar.

  5. Cut into 12 bars

  6. Enjoy!
