Lightened Up Apple Heath Bar Pudding Cookies
These easy apple cookie's soft and chewy texture comes from the Pudding mix in them! The combination of fresh apple and toffee bits give them a taste like caramel apples in a cookie form!
How to Make This:
Ingredients:
1 1⁄4 cup All-purpose flour
1 package (1.34 oz) Kroger Sugar Free Instant Vanilla Pudding & Pie Filling
1⁄2 tsp Baking soda
1⁄2 tsp Table salt
1⁄3 cup Lakanto Golden monkfruit sweetener with erythritol
1⁄4 cup Unsweetened applesauce
4 tbsp Brummel & Brown Spread Made with Yogurt
1 large Egg
1 tsp Almond extract
4 oz Heath Toffee Bits, Milk Chocolate
1 cup Fresh apple (Granny smith), shredded or finely diced
Instructions:
In a medium sized bowl, add your flour, salt, baking soda, and pudding.
Stir together until well combined.
In a large bowl, add your melted butter spread, Lakanto, applesauce, egg, and almond extract.
Stir together well.
Mix you dry ingredients into your wet until combined.
Wash, peel and chop your apples into small pieces.
Fold in apple pieces and Health bar pieces.
Let dough chill in the refrigerator for a couple hours(I just put mine in the freezer for 15 minutes) this makes it easier to work with the dough.
Scoop dough by about 2 Tbsp and roll into balls.
Bake at 350F for 12-15 minutes or until slightly browned. Enjoy!
