Peach Almond Oat PROTEIN Pancake Bars🍑🥞

I meal prepped a WW friendly breakfast with these delicious and easy, high protein pancake bars that used fresh seasonal peaches!

How to Make This:

Ingredients:

  • 1 cup dry mix Krusteaz Buttermilk protein pancake mix

  • 1 1⁄2 cups, dry Quaker 100% Whole grain old fashioned oats

  • 2 scoops protein powder

  • 1⁄4 tsp Baking soda

  • 1⁄2 tsp Baking powder

  • 1⁄4 tsp Table salt

  • 1 tsp cinnamon (divided)

  • 1⁄2 cup Unsweetened applesauce

  • 1 ¼ cup Plain unsweetened almond milk (use 1 cup milk if not adding protein powder)

  • 1⁄2 cup Plain fat free Greek yogurt(or fat free sour cream)

  • 2 large Eggs

  • 1 tsp Vanilla extract (almond extract)

  • 1⁄3 cup Lakanto Monkfruit sweetener with erythritol, golden(or no calorie/pt sweetener of choice)

  • 2 cups chopped (I got this from 1 ½ large peaches) plus ½ large peach to slice on top( I used 2 large peaches total, or about 1 lb)

  • 1 Tbsp Coconut oil(melted)

  • ¼ cup Sliced almonds

  • 1/2 tsp Lakanto classic

  • Cooking spray

Instructions:

  1. In a medium bowl, add oats, pancake mix, protein powder, baking powder, baking soda, salt, ½ tsp cinnamon and stir to combine.

  2. Get your coconut oil melted and set aside.

  3. In a large bowl, add in almond milk, Lakanto golden, applesauce, almond extract, eggs, greek yogurt and melted coconut oil and whisk together well.

  4. Stir in dry ingredients until combined.

  5. Fold in 2 cups chopped peaches then pour batter into prepared 9X9 baking pan.

  6. Sprinkle with almonds.

  7. Mix lakanto classic and ½ tsp cinnamon together and sprinkle on top.

  8. Bake at 350F for 45-50 minutes, or until the center has set.

  9. Baking times vary depending on oven, elevation, etc.

  10. Cool and cut into bars. 9 servings

  11. Store leftovers in an airtight container in the fridge for 5-7 days. Microwave to reheat.

  12. Enjoy!
